In den vorliegenden Untersuchungen wurde der Gehalt von Carotinoiden in Weizen, Mais und Möhren sowie der Polyphenolgehalt in Möhren mit analytischen Methoden zum Nachweis dieser Substanzen gemessen. Der Gehalt der Carotinoide in Mais und der Gehalt der phenolischen Bestandteile in Möhren wurde mit Messungen mittels HPLC-Analytik gemessen.
