Neben einer chemischen Synthese bestimmter Verbindungen können Peptide auch durch Hydrolyse intakter Proteine gewonnen werden. Untersuchungen und Modellierungsansatz zum Einfluss der Stärkesorte und Stärkemenge auf die strukturellen Eigenschaften von Biskuitmassen

In der vorliegenden Arbeit wird der Einfluss verschiedener Stärkesorten und Stärkemengen auf die Struktur von Biskuitrohmassen und der gebackenen Produkte untersucht. Dabei wird der Faktor Sorte in sieben Stufen untersucht: Kartoffel, Mais, Wachsmais, Reis, Wachsreis, Weizen und Tapioka. Der Faktor Stärkemenge wird in drei Stufen (60g / 75g / 90g) untersucht. Die Herstellung der Massen erfolgt zum einen nach traditioneller Rezeptur und zum anderen im modernen All-In Verfahren mit der Zugabe von Emulgator.
