Bestimmte Peptidverbindungen besitzen Geschmacksqualitäten, welche sie für einen Einsatz in Lebensmitteln qualifizieren. Neben einer chemischen Synthese bestimmter Verbindungen können Peptide auch durch Hydrolyse intakter Proteine gewonnen werden. Zur Trennung und Aufreinigung stellt die Crossflow-Filtrationstechnik eine skalierbare Alternative zu chromatographischen Trennverfahren dar.
